7 Things About Me You Didn’t Know

I was tagged by Chessnoid to tell you seven things you don’t know about me after he was tagged…I don’t think that will be too hard because I like to think I’m pretty private about myself and you don’t know much about me already. :D

7 Things You Might Not Know About Me.

1. I wear contacts. Glasses only at night.

2. I love music, all kinds of music, just not anything boring or nonsensical.

3. I built a website for my boss’s wife and it has taken off, now requiring little to no maintenance from me.

4. I will be going back to college in either the Spring or the Fall.

5. My goal is to make enough money online (and the majority has not come from this blog) to pay for the laptop I bought to blog on, once I’ve met that goal, I’ll consider myself a success.

6. I take a lot of pictures and have recently started decorating my house with them.

Fart Around Friday Christmas Shopping Edition

It’s Friday, the day after Thanksgiving, I have turkey in the refrigerator waiting for bread and mayo for lunch and the tree is out and we’re decorating it….so we’ll get right down to it - I need a laugh and I know you do too!

This video I believe is from the show Malcolm in the Middle, it’s really a hilarious show, very real life and funny because real life is funny. Where do you think comedian’s get their material? Real life baby!

Now, as long as you can get through Christmas without doing what happens next, I think you’ll be okay. :D

Be Thankful for Leftover Turkey?

Today I’m going to hook you up with some recipes I’ve found for that leftover turkey you’ll have soon. How can you possibly make leftover turkey taste good and different without remembering the meals past, and maybe not so fondly?

Trust me - with these recipes, you’ll be thankful all over again. (Sorry, I couldn’t help myself, had to throw in a lame joke - it’s a sickness.)

Here’s a recipe for a Turkey Pasta Toss that looks delicious. I’m a sucker for pasta, so this is definitely a winner for me.

TURKEY-PASTA TOSS - Serves: 4

2 medium carrots
3/4 cup unsweetened orange juice
1 Tbsp cornstarch
1/4 Tbsp salt
1/2 tsp dried whole basil
3/4 lb cooked turkey breast, cut into 1/2 inch pieces
8 cups water
1/2 (8 oz) package fettuccine
2 oz fresh snow peas - trimmed
1 cup small fresh mushrooms
8 cherry tomatoes, halved
1 Tbsp margarine

Cut carrots in half lengthwise; scrape halves into long
strips, using a vegetable peeler; cut into 2-inch pieces,
set aside.
Combine orange juice & next 3 ingredients in as small
saucepan; bring to a boil, stirring constantly. Stir in
turkey; cook 1 minute. Set aside.
Bring 8 cups water to a boil in a large dutch oven; add
fettuccine & cook 7 minutes or until tender. Add carrot
strips & snow peas; cook 30 seconds. Drain well, and
return to dutch oven.
Add turkey mixture, mushrooms, & remaining ingredients to
fettuccine mixture; toss gently. Serve warm.

The next one I have for you is a Tex Mex Turkey Chili. I gonna have to try this one!
Check it out:

TEX-MEX TURKEY CHILI -Serves:6

1 cup chopped onion
2 cloves garlic, minced
1 Tbsp vegetable oil
1 Tbsp chili powder
1 tsp cumin seeds
1 tsp sugar
1 (8-oz) can tomato sauce
1 (10 oz) can tomatoes and green chiles, undrained
1 (15 oz) can red kidney beans drained
2 cups shredded cooked turkey breast
3/4 cup water

Combine onion, garlic, and oil in a 2 quart glass measure.
Cover and microwave at high 3 minutes or until onion is tender,
stirring every minute.
Add chili powder and next four ingredients; stirring well.
Microwave, uncovered, at high 6 to 9 minutes or until slightly
thickened, stirring mixture every 3 minutes.
Add remaining ingredients; stir well. Microwave, uncovered, at
high 6 minutes or until thoroughly heated. Yield: 6 cups (about
187 calories per 1-cup serving)

Grab some crackers I’m ready for chili! Sometimes I have to let my southern side show. :D
In anticipation of expanding waistlines and that miserable feeling that makes you want to give some of that food back…take it easy tomorrow, better yet - fix a plate for home and then fix a plate to eat. ;). Knowing the great recipes you can get your hands on and implement with leftover turkey, you’ll be glad you did. I promise.

Here’s more:

TURKEY PASTA PRIMAVERA

1 (12 oz) package uncooked fettuccine
1-1/2 lbs fresh broccoli cut into flowerettes
2 medium zucchini, thinly sliced
6 green onions, thinly sliced
1 sweet red pepper, sliced into thin strips
1 (6 oz.) can pitted ripe olives, drained and sliced
4 cups chopped cooked turkey
2/3 cup grated parmesan cheese
1/2 tsp salt
1/2 tsp freshly ground pepper
basil sauce - recipe follows -
2 cups cherry tomatoes, halved
lettuce leaves

*****Basil Sauce:*****
1/4 cup chopped fresh basil
1 clove garlic
2 eggs
1/2 tsp dry mustard
1/2 tsp salt
1/2 tsp lemon juice
1 Tbsp wine vinegar
1-1/2 cups vegetable oil
1/2 cup sour cream

Cook fettuccine according to package directions; drain.
Rinse with cold water; drain.
Combine fettuccine and next 9 ingredients, tossing well.
Add 2/3 cup Basil Sauce (see Part 2 of this recipe) and
Cherry tomatoes; toss gently. Chill. Serve on lettuce
leaves.
*****BASIL SAUCE*****
Combine basil & garlic in processor and process for 30
seconds or until basil is minced. Add eggs and next 4
ingredients. Process 20 seconds, scraping sides as needed.
With motor running, gradually add oil in a slow, steady
stream, mixing just until well blended. Add sour cream,
and process about 5 seconds or until well blended. Makes
about 2-1/4 Cups.

Mmmmm. Pasta. Okay, I am now anxiously awaiting tomorrow’s time around the table. Good family, great food - I am going to make a tater tot casserole (if you want this recipe leave a comment) for the festivities tomorrow…what will you be taking to your family’s dinner? You’re not the one who brings the rolls are you? LOL. ( I only laugh because that used to be me! )

I got a rare sneak peek and I gotta tell you, I’m revamping my resume and changing my tactics a little when trying to obtain online work. Though I know I’m appreciated at my job, I’m still working for someone else on their terms.

Much like you, I would like to do things on my terms, in every other facet of my life besides career/paycheck, I determine what happens and doesn’t. One day, I’ll be doing that from home. This guide has taught me quite a bit that I didn’t expect to learn.
